One of the first things that Ayurveda teaches is that everything in the universe is made of the 5 material elements - including the human body; therefore, it makes complete sense that our bodies would mimic systems in nature. For an optimal life, we should live with nature, following the cues of our environment.
Just as our bodies go through various internal cycles (think, "biological clock") so does our external environment. Each day there are so many small cycles, within larger systems, that we can use to our advantage or disadvantage. Our daily lifestyle can have a great impact on our total overall (physical and emotional) wellbeing; not only what we do, but also when we do it.
Each day during certain times, 1 of the 3 main doshas dominates our internal systems and external environment. Ayurveda's daily dosha cycle is as follows:
2am to 6am - Vata Dosha
6am to 10am - Kapha Dosha
10am to 2pm - Pitta Dosha

10pm to 2am - Pitta Dosha
The qualities associated with each dosha, tells us which activities are best suited to a particular time of day. For example, Pitta dosha is responsible for our digestive system, so it makes sense that we naturally become hungry when Pitta dosha dominates. This is the optimal time to eat, because food will be well digested and our bodies can make full use of any nutritional value. Additionally, we should take into consideration our own prakriti (dosha that dominates our individual person) to make the best lifestyle and diet choices for ourselves.
